Camille’s Cooking: Lobster Mac and Cheese

Super Bowl Sunday is one of my favorite days of the year and for more than one reason. For me, it is a great day of celebrating a special person in my life as well as enjoying pure-pleasure food. My nephew Anthony was born on Super Bowl weekend, and I completely adore Super Bowl food. Enough said!
The excitement of a Super Bowl party is second only to gift-giving on Christmas morning, after “Santa” has arrived. It means scrumptious overstuffed hero sandwiches, zesty wings, flavorful finger foods and ice cold beer. Add a very enthusiastic gathering of family and friends, and what could be better on a cold winter Sunday?
There are a lot more All-American comfort foods that are added to the list of traditional Super Bowl fare, and one of my favorites is lobster mac n cheese. I have shared my traditional mac n cheese recipe before, but this recipe is a different twist that takes mac n cheese to another level!

LOBSTER MAC N CHEESE
1 pound elbow pasta
1/2 cup butter
1 small onion, diced
1/2 cup flour
4 cups whole milk
2 teaspoons Old Bay Seasoning
4 cups American cheese, grated
1 pound of cooked lobster meat, cut into one inch pieces
In a large pot, boil water for the elbows. When water begins to boil, add salt liberally. Let water return to a boil, and cook elbows until al dente. Drain well.
Meanwhile, in a separate pot, warm butter over medium heat. Stir in onion and cook until tender. Mix in flour and whisk for a few moments, until it lightly browns in color.
In another pot, heat the milk just until it boils and pour the boiling milk into the pot with butter, onions, and flour. Sprinkle in Old Bay. Stir well, and add American cheese. Simmer and stir until thick.
Prepare a baking dish by lightly greasing the inside with butter and dusting evenly with breadcrumbs. Mix melted cheese mixture and lobster with elbow pasta, and pour into the baking dish. Sprinkle top lightly with breadcrumbs. Bake in a pre-heated oven at 350°F for 35 minutes and until golden brown on top.
