
EAST WILLIAMSBURG — AN ARTISANAL COFFEE BAR in East Williamsburg has shifted its business model to serving customers strictly by reservation, according to Daily Coffee News, a publication for specialty coffee professionals. Field Study Coffee, which shares a space with a collector car showroom, is allowing guests to book online one-hour coffee experiences, choosing drinks from the regular menu or booking coffee omakase and guided tastings. Two high-end espresso machines serve different purposes, and each cup is individually brewed.
Slowing the pace of service “lets us spend more time with each guest and better share the stories behind the coffees we’re serving,” Field Study Coffee co-founder and roaster Norberto Peña told Daily Coffee News.
