Swedish-African Ferrane Bakery set to open on Clark Street

BROOKLYN HEIGHTS — FERRANE BAKERY IS COMING to 57 Clark Street, a source tipped to Brooklyn Heights Blog. Clark Pet left 57 Clark in 2019 due to increases in rent. A user of the blog’s forums speculated that the bakery might be Moroccan, due to its name: a ferrane, or farran, is a traditional public Moroccan oven-kitchen.

The bakery’s co-owners, Selim Adira and Emon Maasho, later responded to the BHB’s inquiries, revealing that Ferrane will serve Scandinavian pastries and breads and incorporate East and North African influences. Both Adira and Maasho are Swedish, with Adira having Moroccan heritage and Maasho Eritrean; Adira is also a co-owner of Swedish candy chain BonBon NYC.

In Morocco, it was very common for people to visit their local ferrane, or  فران  (farrān) in Arabic, to utilize these public ovens for bread baking, according to Fez Guide. Visits to the ferrane were so common that many residents would receive their mail there. Staff at ferranes would act like assistants to locals, organizing each person’s stock of bread, ingredients, personal items and cookware.
