Carroll Gardens gets a new vegan spot, for now

Sans, the new experimental vegan restaurant in Carroll Gardens, wants to appeal to plant-based eaters and non-vegans alike.

Chef Champ Jones, the man behind the concept, plans to avoid mass produced animal product substitutes, opting instead to create in-house creations like tarte flambee with maitake mushrooms, plum terrine with pickled jam, and deconstructed lasagna with chickpea brine-based brioche bread and soy milk, VegNews reports.

The spot is open now at 329 Smith St., but go sooner rather than later — Jones plans to keep the restaurant open for a one-year trial run, after which he may or may not stick around, depending on Sans’s success.
